Step 1: Marinating the chicken:
Mix red chilly powder, ginger garlic paste, salt, lemon juice, a cup of curd or yoghurt , cumin, chicken pieces and keep in refrigerator overnight.
Step 2: Roast chicken
We have noticed that the butter chicken served in hotel with be little roasted so we need to do the same. Roast the chicken in oven for sometime, maybe around 10 minutes.
Step 3: Preparing the chicken gravy
Next is to prepare gravy. We are preparing butter chicken so butter needs to be definitely used here. Lol. Heat the butter (white butter) in a pan with oil. Add onions, tomatoes, cumin seeds(zeera), tomato puree, salt, red chilly powder and little sugar. Mix properly. After a minute add the marinated chicken pieces, green chillies, little butter and fenugreek leaves(Methi) that have been crushed nicely. Now add fresh cream. Its best to add little gravy to the cream first and then add this to the gravy back to prevent the cream from curdling.
Step 4: Cook!
Cook till the dish is ready, I mean till the butter chicken is done and ready to be served! Preferably for 15 minutes. Do not cook for longer time after cream has been added.
Butter chicken could be eaten along with naan or else rice. I prefer naan.
